Chinese Mackerel in Tomato Sauce

Shallot  Ginger  Garlic  Aniseed  Salt  Soy sauce  Tomato sauce  Sugar candy  Rice wine

 

Procedure

  1. Remove everything inside the fish, then resin and drain it. Cut the fish into several parts if it’s too big.
  2. Fry the fish first till both sides is lightly browned, then move it out of the pan and set aside.
  3. Pour the oil into the pan, then put shallot, ginger, garlic and aniseed into the pan and stir them quickly for a short while, then add in a proper amount of soy sauce, water and fish in order (the water should cover the fish).
  4. After the water boils, add in rice wine, sugar candy, salt and tomato sauce.
  5. At last, pour the fish with the soup into the pressure cooker and cook for 20-30 minutes (note that, there should be enough water to cover the fish).
